wow, these all look sooo good! I buy buckwheat flour from Whole Foods, and I like making pancakes with a lot of buckwheat. I once saw someone buying every package at the store (about 20 of them!) and asked her what she was making with all that buckwheat, and she said crepes! It is so yummy and very high in magnesium. If I'm making pancakes for other people, I use about half buckwheat, half some other flour, any flour! If just for me, I luv 100% buckwheat pancakes!

These pancakes are so beautiful to look at! I can't wait to try them! When my 4 children were growing up - they're all adults with children of their own now - I made pancakes and waffles every weekend! Would have loved to have these recipes then! I love any holiday involving pancakes, especially blueberry pancakes. :) Those Carrot Cake Pancakes look fabulous...the thicker and chunkier the better! (I'd love a blueberry and date version!) Thanks for the recipes!

As long as they're vegan, we're good to go! I am an Episcopalian as well as a huge Anglophile, so Shrove Tuesday pancakes have always been big for me. I like to do them differently all the time, with fruit and/or chocolate mix-ins, coconut, mashed banana in the batter, etc. My latest creation: basic w.w. pancakes topped with banana slices cooked in a rum-maple syrup mixture!

We have always had pancakes and donuts for Shrove Tuesday. Years ago my Aunts and Granny called it Pancake or Donut Day. Then when I lived in NOLO it was King cakes, bens, donuts and pancakes from Sat till Tues at midnight. Plus beads, beads, beads! Don't forget to make hoe cakes with cornmeal and sorgum syrup, yummy!

I love wheat also but when I when spagetti was offered that way on the shelves it was hard to switch my palette to enjoying whole wheat spagetti because I was to eating enriched flour spagetti. To SOLVE that PROBLEM I at first had to combine 1/2 enriched with 1/2 wholewheat just so I could get used to eating it because I knew that eating wholewheat just like wholegrains is best.
