Earth Balance Almond Butter

From sandwiches to smoothies to cookies, mighty almond butter can do everything peanut butter can; yet, not everyone has tried it. (The reason why is a hard nut to crack!) So, we’re giving away a case of versatile almond butter for summer’s last hurrahs and after-school snack preparations. Read on to find out how to enter to win.

I love to make chocolate/almond butter ice cream! I use 2 low fat, low sugar fudge-scicles & a tablespoon of almond butter. I cut the fudge-scicles off of the stick, cut them up, mix in the almond butter & voila! Chocloate/almond butter ice cream.

Using an immersion blender, I would blend almond butter ricotta cheese, a little bit of stevia and vanilla together to make a great dessert!

I would make an almond butter crepe with bananas and then melt almond butter with chocolate for a drizzle over the top. sprinkle with a few toasted sliced almonds.

The first thing I'd make would be banana almond butter (mix one ripe banana with 1 TB almond butter and refrigerate!). I'd slather it over some sprouted grain toast. Yum!

Truthfully, all the examples cited above look yummy, and I'm especially intrigued by the apple, raisin and almond butter 'sandwiches'. But what I would most likely do is spread it over whole grain waffles and slice bananas or other fruits on it, or top toasted bagels with it (again, with the sliced fruits). Oh, so satisfying and filling for a quick breakfast before work and workouts!

I'd make a bee-line to the flatware drawer for a spoon! Following that I'd make no-bake drop cookies w/ the almond butter mixed with dried cranberries, coconut, pumpkin seeds and crunchies. Then I would make some Thai almond butter sauce for chicken skewers and some lettuce wraps with an almond butter dipping sauce. And that's just for starters!!!!

One of my favorite sandwiches--almond butter and jelly with sliced cucumbers and fresh dill weed on multigrain bread. Sometimes I'll substitute Vegemite for the jelly. Excellent!

I will make a chocolate almond butter banana smoothie. The measurements below are just an estimate- I usually just dump in the ingredients as I go. It turns out a little different each time, but is sooo good: 2 tablespoons cacao (I use Nutiva Naturals) 1-2 tablespoons almond butter 1 banana 1/2 cup acai juice (or more if it seems like more liquid is needed) handful of kale, spinach or swiss chard (really, you don't taste it) 1 pint glass full of ice blend in a high speed blender until everything is pureed, then enjoy!
