Easy Recipes for Shop ‘til You Drop Days

The holiday season means that in addition to the regular busy schedule of school, extracurricular and volunteer activities, our family is adding on planning for parties, shopping for gifts, and looking for that perfect decoration to complete our Christmas tree.

After an exhausting day running around town, the last thing I want to think about is how long it’s going to take to get dinner ready.

I like to vary between homey meals simmered all day in the slow cooker and dishes that can be put together in only a few minutes (bonus if they use up leftovers!). After all, when you’ve got a hungry kindergartener and a crying baby at the same time, dinner needs to get on the table in a flash.

Here are a few of my favorite go-to dinner recipes during the busy holiday season.

sautéed greens, potatoes baked in the microwave oven w/ cheese and butter on top ( I will enjoy the sweet potatoe recipe that you posted), veggie burgers, sweet potato fries, any frozen veggie mix, pasta dishes, and soup soup soup!

Quesadilla - whatever we want to put on it! No preservatives deli meat and mushrooms, bell peppers, cheese, etc. Quick and easy!

Love to put everything in the rice cooker! Jasmine rice, mix veggies and some fish!

I make my fast quick and in a hurry stir fry. I brown ground meat of choice, add onion,mushrooms,shredded cabbage,carrots and any other stir fry veggie I have on hand. Add Coconut Amino's garlic and It's good to go!!
