Butternut Squash and Pecan Blini with Currant CaviarButternut squash is amazingly versatile. It can be baked, roasted, stewed, puréed or mashed. Here are some fun ways to try this sweet, nutritious and totally delicious squash:

  • Roast butternut squash cubes opens in a new tab. Gently toss with leafy green salads, stir into hot grain dishes, toss with roasted apples or pears, or serve with chopped dried fruits such as figs or dates. Don’t forget roasted pecans or your other favorite nuts!

  • Roast and mash with your favorite cheese. I love sharp cheddar to balance the sweetness of the squash. Serve it as you would mashed potatoes.
