For me, "comfort food" needs to hit several marks (beyond just being super delicious!) before it really passes muster. First, it must be warm. Second, it must result in leftovers. Third, I should be able to eat it with a spoon if all other utensils are lost. And, big reveal…this Slow-Cooker Three-Cheese Enchilada Casserole opens in a new tab is my comfort food dish of choice for the new season. Because you essentially make one giant cheese enchilada, the texture is varied because of the different veggies and cheeses, but soft enough for my spoonable requirement. I also love that some of the cooked veggies are blended into a fun sauce. This is one of those perfect dishes to make on Sunday when you’re hustling around getting ready for the week. Spoons up!
