I simply sprinkle brown sugar over top of my bacon and pop it in the oven for 12-15 minutes for the PERFECT crispness. Either served alongside something sweet, like french toast, or salty, like eggs benny - it's an easy way to add a delicious, indulgent touch to any breakfast- and always gets encores!

Let me just say that I live with three teenage boys, who love bacon. So being the health conscious person that I am I would prefer that they didn't ask for bacon every time that I go to the store, but when I do buckle down and buy it, I go all out creating a toasted sesame bagels, tomatoes, avocado, mayonnaise and bacon sandwich for them all to enjoy.

A while ago a friend and I were talking about how there were five things that just make everything better: coffee, chocolate, bacon, garlic, and friends. If we could somehow combine those things we surmised that we would be on to a good thing indeed! The challenge, however, was how we could possibly combine things like garlic, bacon, and chocolate. The solution? A dry rub for bacon that included instant coffee, cocoa powder, garlic powder, brown sugar, and cumin (all VERY carefully balanced to taste), served at a brunch with friends!

Oh my...there's nothing better than sliced tomatoes w/balsamic vinegar & olive oil...perhaps a little goat cheese. The best bacon is pan fried in an iron skillet...easy clean-up with your coffee grinds from your morning coffee.

At Secondwind Farm, our small farm on an island off the coast of Maine, we raise heritage-breed chickens so that we can have lots of fresh eggs. Nothing tastes better for breakfast than an egg fresh from the hen house and bacon. We love the Whole Foods brand of uncured bacon. So does our farm collie, Gertie. The chickens, however, would rather eat Japanese beetles. Go figure.

I have always been a fan of bacon and now even more so with a better product from Whole Foods! Whether snacking on freshly cooked strips or sprinkling pieces in salad, on eggs or whatever, I can now enjoy my splurge food happily knowing it comes from a great source. Forgot to say--we LOVE to drape bacon over our Thanksgiving turkey!It bastes it and imagine the smell of 2 all-time favorites-turkey, and bacon!I learned this from a Southern friend who said her family fights over who gets to eat the bacon slices when they're dry!
