Canning and preserving foods are old-fashioned, right? Not anymore. Many are resurrecting their grandmother’s tradition of “putting up” the abundant fruits and vegetables of the season. Students will learn the traditional method of canning fresh fruits and vegetables from Chef Megan Lambert, owner of

Garnet Gals Local Jams and professor at Johnson & Wales University. You’ll discover the joys of opening a homemade crock of spicy chutney to serve with dinner this winter and the simple pleasure of giving shimmering jars of delectable jams to family and friends. Each student will take home a selection of items made in class. Class includes a light supper and all materials and supplies.

MENU: Red Pepper Jelly, Spiced Apple Butter, Sweet & Spicy Beet Pickles, Pear Ginger Jam, and Mango Chutney.

The cuisine in Normandy is a reflection of the abundance of its farms and orchards. The region’s

400-mile coastline adds richness to the soil and air, which in turn is reflected in its fruits and vegetables. The simple preparations are highlighted with lush dollops of butter and cream. Why else would the use of the descriptive word “Normande” imply a dish that has cream in it? In this demo class, you’ll learn how the measured proportions of each ingredient create perfectly French flavor harmonies. In other words, a little goes a long way!

Making your own pasta is deeply satisfying, surprisingly easy, and the results are delectable. Students learn the techniques for making a basic pasta dough; using a pasta machine to roll and cut fettuccini, pappardelle, and pasta sheets for ravioli; cutting and filling ravioli; making and shaping gnocchi; and preparing pasta sauces. At the end of class, we’ll sit down to an Italian pasta feast. Students leave with the skills and recipes to make these Italian classics at home.

Calling all kids and families to join us for an end-of-summer volunteer project at the Friendship Trays Demo Garden, in partnership with Friendship Gardens. Friendship Gardens is a network of gardens in the Charlotte area that donates their harvests to Friendship Trays, its local meals-on-wheels program.

 

We're excited to roll up our sleeves and help prepare the garden for fall. This will be a family-friendly, two-hour project with tasks for everyone ages 4 and up. After the project concludes we'll have a build-your-own salad bar with all the fixings for participants. We'll "eat a rainbow" in honor of the Whole Kids Foundation and in celebration of our hard work, healthy eating and healthy communities.

Come take a journey to a “magical” region in Northern Africa that has long been known for its rich exotic culture and cuisine, the Kingdom of Morocco. Moroccan dishes are rich in spices and diverse in flavor and textures and often feature saffron, mint, olives, preserved lemons, and meat (lamb, beef, or chicken). During this class, some traditional dishes will be prepared and then at the end of the night you will sit down to enjoy a family-style meal.

MENU:  Moroccan Flat Bread with Roasted Red Pepper Spread; Cous Cous Salad; Tagine Chicken with Cracked Olives & Preserved Lemons; Zalabia with Honey Glaze; and Moroccan Mint Tea.

Long before the kickoff, hungry fans fill stadium parking lots and engage in a little competition of their own. Everything from the traditional grilled favorites, to over-the-top culinary creations can be found at these pop-up food festivals. Tonight our Salud! Chefs share their fan favorites. These recipes are easily prepared and even easier to serve. Whether in a parking lot or around the big screen at home, you’ll be guaranteed to score points with the home team.

MENU: Homemade Potato Chips with Blue Cheese; Beer Brined Grilled Chicken Wings; Oven Roasted New Red Potato Salad with Haricots Vert & Lemon Dijon Vinaigrette; Boneless BBQ Rib Bites with Our Special BBQ Sauce; and Chocolate Peanut Butter Brownies.

Kids love sandwiches and in this class they go beyond the usual sandwich fare and try some updated twists to make a lineup of sure-to-be favorites in our sandwich smack down. Students learn about a variety of breads, ingredient quality, and how to roast vegetables, make homemade mayonnaise, and combine flavors to make countless variations at home. Kids will have fun making these for lunches or as part of simple summer suppers.

MENU: Barbecue Chicken & Cheddar Melt with Roasted Red Onion Mayo; Roasted Eggplant & Mozzarella Panini; Chocolate Almond Butter & Banana on Ciabatta; Bacon, Lettuce, & Heirloom Tomato Sandwich with Avocado & Homemade Garlic Aioli; Swiss & Green Apple Grilled Cheese.

Celebrate Oktoberfest with traditional German fare! Home cooks in Germany are passionate about their food, and you’ll learn how they use seemingly humble ingredients to create tasty masterpieces. Students learn the techniques for some of the most famous German specialties, and discover German favorites perfect for enjoying this fall, complete with beer pairings of course!

MENU: Braised Sausages with Sauerkraut; Weiner Schnitzel with Herbed Spaetzle; Braised Red Cabbage with Apples; and Pear & Currant Strudel.
