In spite of the long coastline, fish is not as abundant in the Mediterranean Sea so it does not play as big a role in the northern cuisine. Francesca presents Sautéed Duck Breasts topped with a sauce made of white wine, truffle oil and cream; Red Cabbage is slow cooked in port wine. It's always handy to have a couple of "sure fire" menu plans in your repertoire to enjoy with someone special. Why not expand your horizons with two new ones that share the tastes of Italy? Join our native Italian cooking instructor in preparing and sampling two menus: Menu one includes tuna steak (pan seared and topped with marinated tomatoes, anchovies, green onions and herbs), fennel and cannellini bean salad (tossed in lemon vinaigrette with red onions). Menu two includes veal chops (stuffed with prosciutto and fontina cheese, sautéed, and topped with a white wine reduction including truffle oil), grilled asparagus spears (topped with shaved parmigiano cheese). Francesca offers four comforting soups to chase away your winter chills. Cioppino, is a fish stew from the Liguria region. Several different kinds of fish are simmered in a clear broth with vegetables. Minestra D'Orzo is a barley soup with lentils, cauliflower, prosciutto and vegetables, simmered in chicken broth. Zuppa di Borlotti is a Tuscan style soup featuring red beans cooked with sausage, vegetables and potatoes. Finally, you understand how to make a good homemade Chicken Stock that will become the base for many of your future soup recipes. Francesca will develop it into a hearty noodle soup for your enjoyment. Scholarship recipients pay $25. In this course a complete rustic Italian meal is prepared featuring an entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Students will assist in preparing slow cooked lamb stew (simmered in red wine, tomatoes, herbs and spices and served with homemade herbed polenta), arugula salad (with dried fruit and balsamic vinaigrette dressing) and poached pears (in red wine, topped with mascarpone cream and honey), followed by the entire meal enjoyed family style. Travelers to Italy may be surprised at the diversity of its regional cuisine. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from southern Italy. Each night a complete rustic Italian meal featuring an entree, side dish and dessert will be prepared and enjoyed together. Week one includes "braciole" (sliced beef rolled up with garlic, pine nuts and parsley, then braised in a red wine and tomato sauce and served over penne pasta), broccoli rabe (sauteed with garlic and chilis) and "crema al limone" (homemade cream custard with eggs and lemon zest, topped with fresh berries). Week two includes "merluzzo alla Siciliana" (cod fillets baked in a red tomato based broth with wine, olives, capers, fresh herbs and bread crumbs, served with warm potato salad tossed with olives, anchovies, capers and a white wine and lemon vinaigrette), steamed broccoletti (with garlic and lemon juice) and a fig tart (topped with walnuts). It is a healthy, versatile meal that can range from simple to fancy, and is typically enjoyed during the winter months in China - especially around the Chinese New Year. In many modern homes, the traditional coal-heated "steamboat" or hot-pot has been replaced by the electric wok. The typical hot-pot meal contains clear broth, and can include meat, seafood, leafy vegetables, and cooked bean noodles with a dipping sauce (according to individual preference). Join Angela Yang as she guides students through the creation of this fun and satisfying meal that the whole family will enjoy!
