Sundays are special family time in Italy. The whole family is involved in preparing dinner and they may sit around the table for several hours eating and talking. Francesca will prepare a special meal for you to enjoy typical of a meal that would be served on a Sunday. As always, feel free to roll up your sleeves and help her in the kitchen - just like family. Recipes: Homemade Lasagna baked in a Genovese style Basil Pesto Sauce; Cotoletta Milanese (breaded veal cutlets); Cauliflower Salad mixed with capers and olives, then dressed with a red wine vinegar; Apple Tart topped with an orange preserve glaze.  This class is held in the Cooking and Lifestyles Classroom at Whole Foods Market, 3135 Washtenaw Ave., in Ann Arbor.  Please register with Ann Arbor Community Education & Recreation. Imagine authentic French dinners that are healthy, tasty and fast to prepare. You can prepare these dishes with your kids and they can be ready to serve in less than half an hour. There is very little chopping and it is mostly assembly. Recipes: Salmon Florentine with a lemon and soy sauce marinade on a bed of spinach; Poulet en Papillote  (chicken wrapped in foil) prepared with mustard, tarragon and garlic; Breaded Pork Chops with a dash of lemon and optional caramelized onions. Travelers to Italy may be surprised at the diversity of its regional cuisine. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from the Neapolitan and Campagna Regions. Each night a complete rustic Italian meal featuring an entrée, side dishes, and desserts will be prepared and enjoyed together. Week one includes herb roasted chicken (served with baked scalloped potatoes, red onion, tomato and fresh herbs), broccoli rabe (sautéed with garlic and crushed chilies), and homemade pastry puffs (filled with chocolate and mascarpone cream). Week two includes homemade cannelloni pasta (rolled around fresh spinach and three cheeses, then topped with a tomato, basil and red wine sauce), “frittata di carciofi” (an omelet of sautéed artichoke hearts), stuffed eggplant and baked apples (with amaretti cookies, walnuts and vanilla ice cream). Feed 4 More is an annual community food drive sponsored by Whole Foods Market customers who purchase $5 and $10 breakfast, lunch and dinner meals of non-perishable foods.  100% of funds collected are donated to 501(c)3 non-profit Food Gatherers, in our community fighting hunger. Our donations will be in cash so Food Gatherers may purchase what they need most. Fundraising will continue through 12/31/13.

Join Francesca in the kitchen and learn how to make authentic Homemade Sausage Neapolitan style. You will chop the meats to create a spicy and a mild sausage mix, and then stuff it into tubes using an attachment for the Kitchenaid mixer. Francesca will use the sausage to make two delicious sauces, served on pasta and accompanied by seasonal roasted vegetables so you can enjoy the results of your labor.
