Rustic Italian Cooking: Part 1 A Taste of Northern Italy with Francesca Giaraffa

Travelers to Italy may be surprised at the diversity of its regional cuisine. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from northern Italy. Each night a complete rustic Italian meal featuring an entree, side dish and dessert will be prepared and enjoyed together. Week one focuses on Emilia Romagna and includes homemade egg pasta sheets rolled with sliced prosciutto and fontina cheese and then baked in a béchamel sauce, veal scaloppini (thin slices of veal dusted in seasoned flour, sautéed and topped with a white sauce), julienned zucchini sautéed in butter, & fresh thyme and “zuppa inglese” (slices of sponge cake layered in an egg custard made with marsala wine and toasted pistachios). Week two explores Toscana with meatballs made with both pork and veal sautéed in white wine, chopped onions and peas. This is served with Risotto made with pancetta, and leeks, simmered in a white wine and chicken broth. Additionally asparagus spears, steamed and topped in a butter, parmigiano, lemon sauce and finished with “zuccotto” (a dome shaped homemade sponge cake layered with gelato and mixed berried).
