This tour will be led by AmyLeo of Vegan Affairs. We will look at  the question, “Why Vegan?”. Why is this diet one to the fastest growing diets nationwide? Who benefits from eating plant-based foods? We will also tour Whole Foods Market to learn how to shop for vegan food (be prepared to do on the spot purchasing for any products that catch your eye). These foods will include meet analogs (substitutes) and naturally occurring vegan foods; produce, nuts, seeds, legumes, grains and more.  You will learn how to shop wisely and quickly. Come prepared to ask any questions you have about moving towards a plant-based diet.

It’s a delicious marathon, but at the end of over a month of champagne cocktails and sugar cookies, it sure is nice to see a vegetable. The new year is an excellent time to get back on track with healthy eating and enjoy the wonderful, nutrient dense foods of the winter months. Whether you’re brand new to healthy eating or just need a jump start, this class can help you focus on fitness friendly foods, inspire you to try new ingredients and techniques, and show you ways to add great flavor to your food without excess salt, fat, or sugar. Additional lessons learned in this class will include the secrets of batch cooking and meal planning, quick and easy vegetable prep, how to substitute white carbs for whole grains and how to identify the most nutrient dense foods in each department of the grocery store. Winter is ripe with root vegetables, leafy greens, citrus, pears and perfect for flavorful, long-braising pieces of meat. Throw in a hearty soup and a luscious dessert, and you might even forget that your car is buried under three feet of snow. In this class, you’ll also learn how to prep hard squashes and root vegetables quickly and safely, whip up a pan of perfectly caramelized onions and the secrets of braising. Leafy greens are one of the lowest calorie, most nutritious foods you can include in your diet. Luckily, greens are also delicious, easy to prep with and extremely versatile. They offer fiber, iron, calcium, Vitamin C and a fat-free platform to build on. In this class, we will go through our wide array of leafy greens one by one, discussing the best way to cook each one. We’ll discuss how to pick the best greens, how to store them, prep them easily and the various cooking methods to highlight their earthy sweetness. Additional skills gained in this class include how to substitute nuts for dairy, proper smoothie procedure and how to build a pesto. The people of India love to play with spices and create simple yet exotic home cooked meals from scratch.  This is what you will do in this class with Anu of Exotic Palates as she shares her mother’s recipes from her homeland.  Enjoy a typical weeknight supper from Anu’s kitchen with these tasty treats. Class has hands on opportunities as desired and is suitable for vegetarian customers. On the menu:

  • Daal soup .. lentils cooked in the choicest of spices with tomatoes … can double up as a first course.
  • Chapati … un leavened, whole wheat bread, hand rolled and toasted on a griddle.
  • Jeera Pulao .. A rice pilaf, delicately scented with cumin.
  • Aloo Mattar Fry .. Potatoes and Peas stir-fried in the warmest of spices, a perfect entrée to be paired with the bread! 
  • Round up the meal with Chaas – A savory yogurt drink to cool one’s palate that doubles up as a mocktail too!

This class will be taught by Chef Ani. Cooking for one can be a challenge, and if your New Year’s resolution is to get back into the kitchen, this is the class for you. It can be hard to motivate yourself to cook well every day when no one would know if you just ate popcorn and a popsicle for dinner. In this class, we’re going to make shopping and cooking for one a breeze. We’ll discuss how to shop strategically and meal plan, how to mix it up without needing to buy a million groceries, and how to save time in the kitchen so you can savor your supper. Focusing on nutritious ingredients and techniques that minimize time, but maximize deliciousness, we’ll delve into cooking for one and how to set up your kitchen to make it easy and fun. Other lessons included in this class will include how to meal plan, how to batch cook, how to stir fry properly and how to select cuts of meat and seafood that will satisfy in quick, delicious meals. This class will be taught by Chef Ani. Sushi has a rich, deep history. The concept is hundreds of years old, taking advantage of natural resources from its home region of Japan and providing a fix for those who wanted to preserve their supper without refrigeration. To Americans, however, sushi is a new, mysterious thing- becoming popular on the West Coast in the early 1950s, and going from the shores of the Pacific to the shores of the Great Lakes as few as thirty years ago. With any new cuisine comes mystery, and we’re here to delve into the mysteries of sushi- its terminology, the differences between Japanese and American style sushi, how to make great sushi rice and how to form maki, or rolls, in the comfort of your very own home. Each participant will have the opportunity to learn the maki method, then dive in and choose their own fresh fruits, vegetables and seafood to create three maki rolls. After enjoying your delicious homemade sushi, you go home with the bonus of your very own sushi mat for future rolling ventures. This class is hands on, is suitable for gluten free customers and has options for vegetarian and vegan customers. Come hungry!

Are you an outdoor enthusiast?  Do you scan the skies for the first flakes to fall and run to your wax bench and blow the dust off the skis or reach into the depths of that closet under the stairs for the snowshoes?  If so, THIS is the class for you!  We will talk about all things active and all things outdoors and most importantly, how to fill your tank with the appropriate fuel to exceed all your expectations for a most excellent day outside that DOESN'T have any room for sugar crashes, low blood sugar or a cold core!  This is a hands on class where you'll get down and dirty with some of the best ingredients for your body temple on the planet.  Prepare to make some yummy treats that are portable, calorie dense to fuel you for hours AND delicious!!  You will learn about great foods to keep on hand that are great for keeping blood sugars stable, foods that are warming and best for cold climates like ours and tips on keeping your inner core warm, which is vitally important in our climate if you spend a lot of time outside!  Handouts and recipes will be given as well as the dishes that we'll co-create together. This class will be taught by Chef Ani. This class will be taught by Chef Ani. Delicate, discerning, delectable and detailed- all of these words describe the palate and culture of Japanese culinary life. A cuisine that can be mind-bogglingly complex or Zen simple, the food of Japan has become one of the most popular cuisines worldwide. Its emphasis on freshness, seasonality, simple preparation styles and good cooking technique can be seen in something as humble as a bowl of rice, while the hyper-popular pub foods we often see here in America showcase the cuisine’s clever layering of flavors, textures and visual aspects to create dazzling dishes. Simple or complex, sweet, savory or all of the above, it is always delicious. Chef Ani will walk you through creating the most important Japanese ingredient- a good dashi, or broth, discuss other traditional Japanese ingredients such as soy, miso, rice, tea and seaweed, and show you how to produce light crispy tempura. Class has gluten-free options upon request and has hands on opportunities as desired. Come hungry! Pre-registration is required. On the menu:

This class will be taught by Chef Ani. In this modern world, we have loooooong days. Between working, working out, family time, time with friends, errands, and etc, we’re on the go a lot. With long days come grumbling tummies, and sometimes, there’s no time to stop and eat. Thus, we have become increasingly dependent on snacks. There are good snacks, that provide us with protein, vitamins, fiber and complex carbohydrates, and there are bad snacks, that may be tasty, but are nutritionally empty. Often, the difference between being able to snack on the good stuff and buying a tiny, expensive packet of fruit snacks out of a vending machine is good planning, and that is where our class today comes in. Learn how to weed out the bad snacks to get down to the delicious, nutrient dense snacks that you can easily take with you in the car, at your desk or in your bag. In additions to the snacks made in class, you will get a list of 20 additional snacks under 300 calories to give you more ideas to keep you snacking on healthy foods all month long. One of the easiest switches you can make in the road towards sustainable healthy eating is from nutrient-stripped white bread, rice, pasta and other grains to fiber-packed, nutrient rich whole grains. Be it in your bowl of morning oats or your plate of evening pilaf, whole grains fill you up, provide you with protein, and are a great source of many essential nutrients. In this class, we’ll explore the bounty of whole grains and whole grain foods available in our store. We’ll discuss how to select them, cook them, store them and of course enjoy them in a myriad of flavorful dishes full of flavor, texture and nutrition. Additional lessons learned in this class include making homemade crackers and flatbreads, how to substitute whole grain flour for white flour and how to batch cook. Nothing is a better winter treat than biting into a juicy, succulent pear. A versatile fruit that can be used in sweet and savory dishes, pears bring fiber, Vitamin C, a velvety texture and bright flavor to the table to complement other fall foods such as pomegranate and root vegetables. In this class, you’ll learn how to pick the perfect pear, how to store them for maximum shelf life, taste the difference between our many varieties and enjoy them raw and cooked in a winter feast.
