This class will be taught by Chef Ani. Morocco is a fascinating intersection of many cultures, and each has left its mark, especially when it comes to food. Located in the crown of Africa, a stone’s throw from the Middle East and the Mediterranean, Morocco offers flavors sweet, sour, spicy and stimulating that is uniquely its own. In this class we’ll start with the basics- how to make the much loved Moroccan mint tea, how to make and use preserved lemon and its two most widely used spice blends- ras el hanout and firey harissa paste, then move into some of the country’s classic dishes. Special skills learned during this class include the best way to toast and blend spices, how to work with filo dough, how to choose cuts of meat for braising and how to produce light, fluffy, flavorful grains. Class has hands on opportunities as desired. Come hungry! On the menu:

This class will be taught by Chef Ani. Delicate, discerning, delectable and detailed- all of these words describe the palate and culture of Japanese culinary life. A cuisine that can be mind-bogglingly complex or Zen simple, the food of Japan has become one of the most popular cuisines worldwide. Its emphasis on freshness, seasonality, simple preparation styles and good cooking technique can be seen in something as humble as a bowl of rice, while the hyper-popular pub foods we often see here in America showcase the cuisine’s clever layering of flavors, textures and visual aspects to create dazzling dishes. Simple or complex, sweet, savory or all of the above, it is always delicious. Chef Ani will walk you through creating the most important Japanese ingredient- a good dashi, or broth, discuss other traditional Japanese ingredients such as soy, miso, rice, tea and seaweed, and show you how to produce light crispy tempura and the elusive, silky, Japanese “hot spring” egg. This class will be taught by Chef Ani. During the bleary-eyed, hectic beginning of the day, nutrition often takes a backseat to convenience. With little or no time to prepare a complicated meal, we count on energy bars, refined cereals, pastries or other low-prep foods to get us through the long hours until lunch…and we’re hungry almost immediately. The problem with these convenience foods is that they’re often calorie dense, but nutrient light, containing none of the fiber, protein or other nutrients we need to hit the ground running. In this class, we’ll concentrate on whole grain breakfasts that can be batch-cooked quickly and easily. Each recipe can be stored for up to a week and will focus on natural sweeteners, whole grains and plant-based protein, and maybe even make you look forward to your alarm clock going off.  Class is vegan friendly, has gluten-free options upon request and has limited hands on opportunities. This class will be taught by Chef Ani. Baking gluten free is much more than simply substituting rice flour for wheat flour. Gluten is a primary component in what turns flour and water into bread, and without it, you need a little extra protein and a little extra help to get a loaf with a pleasing flavor and texture. In this class, we’ll dive into the chemistry of gluten free baking, sort out the gluten free flours to figure out which flour is right for which type of bread or baked good, and discuss methods for success when baking gluten free bread from scratch. Chef Ani will bake three breads- one from a sourdough style starter, one just with yeast, and one “quickbread” leavened with baking powder and baking soda. In addition to these homemade loaves, you’ll try several frozen and fresh gluten-free breads to evaluate flavor and texture to find the one that’s right for you. Dinner will not be served during this class, though you will be tasting a good deal of bread, so please plan accordingly. Class is suitable for gluten free and vegetarian customers and is dairy free (but not vegan) and is a demonstration style class. Come with your most challenging baking questions!

This class will be taught by Chef Ani. Sushi has a rich, deep history. The concept is hundreds of years old, taking advantage of natural resources from its home region of Japan and providing a fix for those who wanted to preserve their supper without refrigeration. To Americans, however, sushi is a new, mysterious thing- becoming popular on the West Coast in the early 1950s, and going from the shores of the Pacific to the shores of the Great Lakes as few as thirty years ago. With any new cuisine comes mystery, and we’re here to delve into the mysteries of sushi- its terminology, the differences between Japanese and American style sushi, how to make great sushi rice and how to form maki, or rolls, in the comfort of your very own home. Each participant will have the opportunity to learn the maki method, then dive in and choose their own fresh fruits, vegetables and seafood to create three maki rolls. After enjoying your delicious homemade sushi, you go home with the bonus of your very own sushi mat for future rolling ventures. This class is hands on, is suitable for gluten free customers and has options for vegetarian and vegan customers. Come hungry!

This class will be taught by Chef Jeremy. Knife in hand, you will learn how to confidently tackle preparing meat and fish by learning basic butchering and cooking techniques. Learn how to trim and tie a pot roast, then learn the finer points of disassembling a whole chicken and a new way to cook it. Learn to skin and then filet a fish into perfect portions! No experience is necessary however basic familiarity using a knife and cutting board is recommended. During the second half of the class we will prepare and then enjoy a family style meal made using the skills we just learned. This class has gluten free options and has lots of hands on participation throughout the class. On the menu:

This class will be taught by Chef Jeremy. What causes mashed potatoes to become gluey and heavy instead of creamy and light? Why do roasts overcook? For something so elemental to our daily lives, cooking can get complicated once science takes over. The problem is that good recipes can only take you so far. Successful cooks benefits from the cook developing intuition and a sixth “cooking” sense in the kitchen. The truth is, great cooks don’t have culinary ESP, they simply understand the fundamental science behind why foods act the way they do, and you can to. This class is pescatarian friendly and gluten free with hands on opportunities as desired. On the menu:

Knife in hand, you will learn how to confidently tackle preparing some of your favorite seasonal vegetables as well as learning the cooking methods the pros use to get such delicious flavor. Chef Jeremy will guide the class through beginner, intermediate and advanced cutting techniques. No experience is necessary however basic familiarity using a knife and cutting board is recommended.

During the second half of the class we will prepare and then enjoy a vegetarian family style meal made using the skills we just learned. This class is vegetarian and gluten free and can be vegan upon request. This class has lots of hands on participation throughout the class. On the menu:

This class will be taught by Chef Ani. Though a relative newcomer to American supermarkets, mangos have quickly become one of the nation’s favorite fruits. With cultures all around the world that use these delicious fruits in cooling beverages, spicy sauces, refreshing salads and desserts, it was only a matter of time. Today, we’re going to get to the root (or pit) of what makes mangos so darn delicious- the different varieties available, how to pick the best ones and for which tasks, how to prep safely, store wisely and work that sweet-tart flavor into every bite. We’ll also work with dehydrated and freeze- mangos to explore the wide variety of flavors they can add to our cooking. Additional lessons include how to make mango pickles, how to roll spring rolls at home, how to make fruit and vegetable “noodles” and how to make a delicious icy granita.
