This class will be taught by Chef Ani. Many of us rely on recipes to bring new, exciting flavors into the kitchen and keep us and our loved ones happy and fed. Recipes are a great jumping off point for home cooks, as many recipes are simply a combination of a solid cooking technique and interesting flavor combinations. Whether you’re brand new to the kitchen or a seasoned (pun intended) dinner veteran, learning the ins and outs of a technique such as braising, crafting a grain salad or stir-frying can make you a more creative and adaptable cook, and allow you to use what you have on hand, what’s on sale or what’s in season. In this class, we’ll go through five different techniques, and send you home with 20 recipe variations for each technique, giving you 100 recipes total. You’ll learn about the science behind basic cooking methods, how to create interesting flavor pairings and how to substitute for different ingredients in a recipe. This class is accessible and practical for cooks of all levels of experience and enthusiasm, and is useful for families who follow any type of diet- vegan, vegetarian, gluten-free, etc. This class is hands on and can accommodate different dietary restrictions or preferences upon request. Nutritious, delicious and abundant, kale and other members of the brassica family such as cabbage, cauliflower and broccoli are so over being a side dish- they want to be the main course. Brassicas can be enjoyed raw or cooked by almost every cooking method available. Learn how to select the best green veggies, how to clean them, store them, prep them and enjoy them in many different ways. We’ll discuss ideal cooking techniques for different members of this big vegetable family, which flavors pair with each veggie and how to make a big plate of healthy veggies palatable for lots of different types of eaters- at breakfast, lunch or dinner! Additional lessons in this class will include how to create deep savory flavors in vegan dishes, how to caramelize vegetables, and how to make your own addictive candied nuts. This class will be taught by Chef Ani. Sushi has a rich, deep history. The concept is hundreds of years old, taking advantage of natural resources from its home region of Japan and providing a fix for those who wanted to preserve their supper without refrigeration. To Americans, however, sushi is a new, mysterious thing- becoming popular on the West Coast in the early 1950s, and going from the shores of the Pacific to the shores of the Great Lakes as few as thirty years ago. With any new cuisine comes mystery, and we’re here to delve into the mysteries of sushi- its terminology, the differences between Japanese and American style sushi, how to make great sushi rice and how to form maki, or rolls, in the comfort of your very own home. Each participant will have the opportunity to learn the maki method, then dive in and choose their own fresh fruits, vegetables and seafood to create three maki rolls. After enjoying your delicious homemade sushi, you go home with the bonus of your very own sushi mat for future rolling ventures. This class is hands on, is suitable for gluten free customers and has options for vegetarian and vegan customers. Come hungry!

While we’re eating, we’ll learn about how apples grow by reading The Seasons of Arnold’s Apple Tree by Gail Gibbons and brainstorm some great names for the Minnesota’s new apples. Doesn’t that sound a-peal-ing? This class is open to kids 5-12 and are drop off classes- kids only, please! Vegetarian options are available. Come ready to cook and maybe get a little messy. Though it is actually one of the easiest and most delicious things a home cook can prepare, there are some tricks to learn and knowledge to undertake before you can effortlessly turn out perfect seafood at home, and this class aims to give you exactly that. If you haven’t had our seafood before, you’re in for a real treat- it is fresh, sustainable and absolutely delicious, with no antibiotics, growth hormones or preservatives. Whether you’ve never seared a filet salmon in your life or simply need to add more recipes to your collection, this class will go through several of the major seafood cooking methods, show you how to select the right pans and cooking gear for cooking seafood, how to season it to perfection and how to tell when it’s perfectly done. Areas of focus include how to poach properly, how to properly pan-sear and grilling methods and how to cook fish via indirect heat. Soup can be many things- comforting, virtuous, quick cooking, long-simmering, designed to use the best of the season or to clean out the fridge. In this class, we’ll discuss some of the basic methods for making soup and how to turn these basic techniques into a variety of different pleasing meals. We’ll identify the perfect pots for different types of soups, how to use a pressure cooker and crockpot to save you time in the kitchen and how to prepare vegetables, grains, beans and meat for the soup pot. This class will be taught by Chef Ani. Geographically, China is one of the world’s largest countries, and has both absorbed and provided culinary influence to many cuisines around the world. One of the most enjoyable ways to experience Chinese cuisine is through the celebration of dumplings and other small plates that is dim sum. Typically served as a brunch, carts of steaming bowls of different items are accepted and shared among the table. Tea is an integral part of dim sum as well, with as many as eight cups being served along with the meal. The possibilities for dim sum are endless. Today, we’ll focus on hearty, comfort food dishes perfect for the fall table. We will also delve into Chinese tea and tea classifications, and sample several teas throughout the course of our meal. Class has hands on opportunities as desired. Pre-registration is required. On the menu:

This class will be taught by Chef Jeremy. While not overly complicated, there are subtleties to creating the perfect hand-held dessert that are often overlooked. There are millions of recipes out there for bars and cookies, of all types and not all of them are cookie-jar worthy. We have done the leg-work for you and sifted through everything to bring you some of the most interesting and delicious cookie and bar recipes out there. Prepare to be delighted as we walk through these five award winning recipes, with any luck there will be some to take home to our families but even if we eat them all, after Chef Jeremy’s instruction you will easily be able to duplicate these recipes at home later. Class can be vegetarian upon request and has hands on opportunities as desired.
