Indian Cooking Class Recipe

Class was held in the cafe,

Cauliflower, Potato, and Peas Curry

Ingredients

4 Tablespoons oil

1 large onion, finely chopped

1 Teaspoon Ginger

1 Teaspoon Garlic

1 Teaspoon Turmeric

1 Teaspoon Cumin powder

1 Teaspoon Coriander powder

1 tsp. salt

½ tsp. red chili powder

14 oz. can diced tomatoes

½ tsp. sugar

3 medium potatoes cut into chunks (2 inch pieces)

½ head cauliflower, cut into florets

1 cup frozen petite peas

handful fresh coriander leaves , roughly chopped, to serve

squeeze ½ lemon juice

naan bread and natural yogurt, to serve

 

Directions

  1. Heat the oil in a saucepan. Cook the onion for 10 minutes until soft and golden brown.
  2. Add the ginger, garlic, turmeric, cumin, coriander powder, red chili powder and salt. Cook for 2 more minute.
  3. Stir in the tomatoes and sugar.
  4. Add the cauliflower, potatoes and 1 cup water.
  5. Bring to a simmer.
  6. Reduce heat to low, cover with a lid and gently cook for 15 minutes, stirring occasionally, until the potatoes are done.
  7. Add peas and cook an additional 5 minutes.
  8. Sprinkle chopped coriander leaves and serve.

 

Chana Masala Recipe

 

Chana masala is a popular vegetable dish in Indian cuisine. It’s a hearty, saucy and spicy chickpea and tomato dish.

 

Ingredients:

 

  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, diced
  • 2 teaspoons grated fresh ginger (1 inch piece)
  • 1 teaspoon garlic paste (3 cloves)
  • 1 (28-ounce) can diced tomatoes with their juices
  • 2 teaspoons garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon kosher salt
  • 1/2 teaspoon turmeric
  • 2 (15-ounce) cans chickpeas, also known as garbanzo beans, drained and rinsed
  • 1/2 cup water

 

Method:

 

  1. Heat the oil in a large frying pan over medium heat until oil is hot.
  2. Add the onions, ginger and garlic. Cook, stirring occasionally, until the onions have softened, about 6-7 minutes.
  3. Add the diced tomatoes and sauté for 4-5 minutes, stirring occasionally.
  4. Add the garam masala, coriander, salt, and turmeric and stir to coat the onion and tomato mixture. Cook, stirring occasionally, until fragrant, about 2 minutes.
  5. Add the chickpeas, and water. Stir to combine, scraping up any browned bits from the bottom of the pan, and bring to a simmer. Reduce the heat to medium low and simmer, stirring occasionally, until the flavors have melded and the sauce has thickened. About 20 minutes.

 

Serving Suggestion:

 

  • Serve with naan/pita bread or over boiled basmati rice

Shami Kabab Recipe

Ingredients:

 

  • Stew Beef 11b
  • Yellow (Chana) lentils ½ cup
  • 5 Cloves
  • 4 Black Cardamoms
  • 4 Green Cardamoms
  • 1 Cinnamon Stick
  • 2 Bay leaves
  • 1 Medium Onion
  • 4 Garlic cloves
  • 2 Teaspoons Grated Ginger
  • 3 Cups Water
  • 2 Eggs
  • Fresh Mint 1 bunch
  • Fresh Coriander 1 bunch
  • I teaspoon Garam masala powder
  • 1 teaspoon ground Cumin
  • 1 teaspoon ground Turmeric
  • ¼ teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon ground Coriander
  • ½ teaspoon ground black pepper
  • Oil for frying

 

Method:

  1. In a pan put stew beef, lentils, chopped onion, garlic, ginger, whole and powdered spices with 2 glasses of water. Bring to a boil, cover and simmer till all ingredients are tender and the water is completely absorbed.
  2. Remove from stove and let it cool.
  3. In a food processor blend the meat and lentil mixture with eggs, fresh mint and coriander.
  4. Take the blended mixture out and make into small patties.
  5. Heat some oil and fry the patties.

 

Serving Suggestion:

 

Serve with pita bread or naan
