But spend some time in Central and Northern Italy, and you’ll see that this beautifully diverse country also has its share of winter weather. In this class, Chef Carl Raymond shows you how to make a few of his favorite Italian stews and braises that will surely help take off the seasonal chill. Come spend a cozy afternoon in our kitchen-classroom and prepare some traditional recipes from Tuscany, Umbria, Abruzzo, and Italy’s northern region.

Hearth-baked flat breads may be a familiar staple in many cultures all over the world, but focaccia is surely one of the most beloved. Whether adorned with bright red sauce and assorted toppings, or simply enjoyed with a dash of coarse salt and really good olive oil, this Italian favorite can stand up to all kinds of flavors and delicious embellishments. Join longtime culinary instructor and bread/pastry expert Lynn Kutner (fresh from her recent travels throughout Italy) in this hands-on baking workshop, and learn how to turn out your own fresh focaccia from home.

On the Menu: Variety of Vegetable Focaccia (Eggplant, Zucchini, Roasted Pepper, Tomato) with Traditional and Whole Grain Doughs; Fresh Arugula Pesto; Sicilian-Style “Norma” Sauce.

It is a Cantonese tradition that became popular in teahouses along southern China, where weary travelers would stop for a cup of tea and some food. Culinary Center Educator Wai Chu will discuss how this meal has become a ritual for so many Chinese families, and he’ll show you how to make authentic dim sum in your home kitchen.

Whole Kids Foundation Mission is to:

·        Provide grants for school gardens and related programs

·        Offer cooking and nutrition education for school teachers and staff
