Rip Esselstyn, a former firefighter and triathlete, is an American health activist and food writer. He is the author of The Engine 2 Diet (2009) and My Beef With Meat (2013).
Esselstyn is known as an advocate of a whole-foods, plant-based diet, one that avoids meat, fish, eggs, dairy and processed foods, and is nutrient-dense.  He calls it a "plant strong" diet, a term he has trademarked.  He appeared in the 2011 documentary about plant-based nutrition, Forks Over Knives.
Join us as we host Rip for a lecture, book signing, and store-wide food tasting.

Free!  You must have a copy of “The Engine 2 Diet” to use during the challenge, which can be purchased from the Healthy Eating Hub.

Ready to lose weight, lower cholesterol, significantly reduce risk of disease and become more fit in just 4 weeks?  Follow the Engine 2 28-day challenge and gather the tools in a fun and supportive program conducted by Healthy Eating Specialist, Christina Bender.  Participants will receive a goody bag to help them start their journey and weekly meet-ups including culinary demonstrations, label reading lectures and more! Let Healthy Eating Specialist Chrissy show you how to make satisfying meals that are meat-free! Learn how meal planning can be a useful tool in preparing healthy meals with a busy lifestyle. 

Week 2: Motivation, Real-Life Application, and Knife Skills

Learn how to stay on track, feel motivated, and feel great!  We will also teach basic knife skills.

Week 3: Label Reading and Food Footprint Class
*Saturday, November 2nd @ 10 am  
Learn how to read a food label and interpret marketing vs. real nutritional information.  Also learn about the environmental impact of your food choices.

Week 4: Plant Strong Myths Debunked and Graduation
Thursday, November 7th  @ 6:30 PM  

Questions we will address include: 

How will I get enough protein?

Where will I get calcium?

What about Iron and B12?

Isn't olive oil good for me?

What about eating animal foods in moderation?
