Bean Basics

This class will be taught by Chef Ani. Beans and lentils are some of the powerful things you can have in your pantry- and on your plate. With a long and illustrious history of feeding hungry gourmets on the cheap, beans and legumes figure into almost every culinary culture on Earth, and with good reason. They’re an excellent source of lean protein, fiber and complex carbs that are low in calories and contain no cholesterol. They’re neutral in flavor, so they can blend seamlessly into dishes, adding a creamy texture and subtle earthiness to everything from appetizer to dessert. In this class, we’ll discuss soaking beans, how to cook them by many methods including braising and pressure cooking, when to use dry vs. fresh beans, and how to pick the right bean or lentil for your dish. Areas of focus include how to make flavorful veggie burgers, how to add beans to desserts and how to make a delicious Moroccan spice blend. This class is vegetarian, with vegan and gluten free options upon request and hands-on opportunities as desired. Come hungry! On the menu:

The evening starts with energizing yoga on the scenic roof top at Calhoun Beach Athletic Club. Afterwards, refresh and rehydrate yourself with a delicious smoothie prepared by Whole Foods Market Lake Calhoun.  All experience levels are welcome. Artisan Tacos and Salsas

This class will be taught by Chef Jeremy. Salsa has long surpassed ketchup as the most popular condiment. Tacos are a huge reason for this and are no longer just limited to Mexico - they are popular worldwide. We will start by making and canning some homemade salsa and then preparing a few types of world famous tacos to eat with our fresh salsa. Did we mention that you will also get to take home a jar of homemade salsa verde at the end of class! Learn the recipes that helped this simple street food become a culinary powerhouse in our ever popular tacos and salsa class. This class can be gluten free upon request and has hands on opportunities as desired. Pre-registration is required. On the menu:

·         Scallop, Shrimp and Sole Tacos with Pea Shoots, Scallions and Avocado

·         Authentic Carnitas with Homemade Tomatillo Salsa Verde

·         Traditional Barbacoa served with Cilantro and Red Onions
