January offers a fresh start and a perfect opportunity to adapt healthier habits for the New Year.

The Engine 2 28-Day Challenge is a heart-healthy, plant-strong® introduction to a lifestyle, created by former firefighter and pro triathlete, Rip Esselstyn, author of The Engine 2 Diet and My Beef with Meat. (Rip is also the son of Caldwell B. Esselstyn, Jr., MD author of Prevent and Reverse Heart Disease. Healthy eating runs in the family!)

Rip launched into the spotlight in 2003 when a co-worker at the Engine 2 fire station in Austin Texas discovered that his cholesterol was very high. Rip encouraged the Engine 2 team to switch to a whole-foods, plant-based diet to help their colleague. It was a complete success with many of them realizing huge health benefits.

The 28-Day challenge gradually phases out certain types of foods while introducing healthier choices. Week 1 – all dairy is removed. Week 2 – all meat. Week 3 – extracted oils (vegetable oils, olive oils, etc). Week 4 serves to re-enforce what is learned the previous weeks and solidify the benefits of living on a whole foods, plant-based diet.
