When we think of Italy, we think of sunny days, warm breezes, and outdoor-market ingredients that need little to no preparation. But spend some time in Central and Northern Italy, and you’ll see that this beautifully diverse country also has its share of wintry weather. In this class, Chef Carl Raymond shows you how to make a few of his favorite Italian stews and braises that will surely help take off the seasonal chill. Come spend a cozy evening in our kitchen-classroom and prepare some traditional recipes from Tuscany, Umbria, Abruzzo, and Italy’s northern region.

Throughout North Africa and parts of the Middle East, couscous is regarded as the ultimate comfort food. Like rice to Persian cuisine or pasta to Italians, couscous is revered as almost sacred—a food to enjoy every day, and to dress up for special occasions. Today, most people only know the factory-produced, quick-cooking version that comes in boxes with flavor packets. But at its heart, couscous is the opposite of fast food—made by hand and savored accordingly. In tonight’s class, the dedicated team behind NYShuk will show you how to make authentic Middle Eastern Jewish dishes featuring couscous from scratch and their superb artisanal harissa. Come and learn how to hand-roll couscous at home, and taste how generations of love and tradition can deliciously infuse a home-cooked meal.
