A healthy diet of whole grains, beans, vegetables, and fruits may help prevent diabetes, cardiovascular disease, cancer, and other chronic diseases. This curriculum is based on the Physicians Committee for Responsible Medicine’s successful 21-Day Kickstart program. Depending on one’s perspective, the Kickstart is about losing weight, maintaining a healthy weight, or simply embracing an overall healthful diet. Much of the basis of the Kickstart is about making a qualitative shift in the way we eat as opposed to a quantitative shift. For some people, it’s the first time the idea of not restricting amounts of foods but rather choosing the right foods has been the guiding principle for losing weight and staying healthy. The revelation is bolstered with clinical benefits such as lower cholesterol, better diabetes control, and lower blood pressure, as well as improvements in energy and mood.
Food for Life: Kickstart Your Health will allow class attendees to discover the world of health through general topics ranging from digestion to blood pressure. Results are likely to be immediate and impressive!

More than one-third of adults in the U.S. are obese – a condition that can lead to many other health problems including diabetes, heart disease, and even increase one’s cancer risk. This introductory class will look at factors in foods for effective weight management. Discussion also includes how and why plant-based diets are beneficial for health in a multitude of ways. Suggestions and tips for plant-based breakfasts, lunches, dinners, and snack foods are offered.

Focusing on studies published just over the last year in peer-reviewed scientific medical journals, Dr. Greger offers practical advice on how best to feed ourselves and our families to prevent, treat, and even reverse our top 15 killer diseases.
A founding member of the American College of Lifestyle Medicine, Michael Greger, MD, is a physician, author, and internationally recognized speaker on nutrition, food safety, and public health issues. He has lectured at the Conference on World Affairs, testified before Congress, and was invited as an expert witness in the defense of Oprah Winfrey in the infamous "meat defamation" trial. He is a graduate of Cornell University School of Agriculture and Tufts University School of Medicine. Currently Dr. Greger serves as the Director of Public Health and Animal Agriculture at The Humane Society of the United States.
