Are you or someone you know still under the impression that an epic cheesecake requires firing up that old oven?  This class will prove that nothing could be farther from the truth! We will learn how to make a luscious and silky smooth pumpkin cheesecake with chocolate pecan crust.

Pumpkin cheesecake with chocolate pecan crust

 

 

Crust

1 1/4 c pecans

8 dates, pitted

1 1/2 tbsp raw cacao powder

¼ tsp organic vanilla extract

Pinch Himalayan pink salt

Cacao nibs (optional)

 

Place pecans in food processor and process into small bits. Add dates, process until finely ground. Add cacao nibs last to mix before pressing into spring form pan. I used two small 4-inch pans for this recipe. You may have extra crust, which you can use as ice cream topping. Place in refrigerator.

 

 

Filling

2 1/2 c raw cashews, soaked for at least 2 hours

½ c organic coconut butter, melted in dehydrator

1/8 c organic coconut oil

1 tbsp almond milk

1 cup shredded carrots

½ c maple syrup

½ inch fresh ginger

1 tbsp soy lecithin

1 ½ tsp cardamom

1 ½ tsp cinnamon

½ tsp nutmeg

½ tsp cloves

½ tsp vanilla extract

Pinch salt

 

Combine all ingredients in vitamix. This will take a bit. Scrape sides of blender and process as needed until you have a smooth consistency. Place the cheesecake in the freezer to firm up for about 4 hours until set before unmolding. 

 

Cream frosting (optional)

1 c young coconut meat

2 tbsp coconut water

1 ½ tbsp raw coconut nectar or maple syrup

1/8  tsp sea salt

1 tsp vanilla extract

3 tbsp raw coconut butter, warmed in dehydrator

 

Combine all ingredients but the coconut butter in a vitamix and process until smooth.  With the motor running, add the coconut butter and process a minute more.  Pour the cream into a bowl and let sit in the freezer for about half an hour to 45 minutes or so until the consistency of whipped cream then place in the fridge until ready to use.

"Foggy Ridge Cider is the first cidery south of MA to focus full time on growing heirloom cider apples and making artisan cider. Foggy Ridge grows over 30 cider apple varieties, including many English and Colonial American varieties not widely grown in Va. Apples like Hewe's Crab (grown by Thomas Jefferson for cider at Monticello), Ashmead's Kernel, Harrison (a famous colonial cider apple), Tremlett's Bitter and Dabinett are blended into 4 sparkling ciders and 1 apple port. Foggy Ridge Cider is farm cider-we work hard to translate the special flavors and aromas of real cider apples into a fermented cider. This cider is crisp, elegant and full of flavor with no added sugar, flavorings like oak, hops or other fruit juices.
