Warm and Cozy Winter with Chef Egg

Menu: Homemade Beef Stroganoff, Pork Loin with Figs and Apple Cider Sauce, Sweet Potato Hash

 

NO CLASS TONIGHT DUE TO THE SNOW, but enjoy the recipe.

 

Warm and Cozy Winter with Chef Egg

 

Beef Stroganoff

 

2 lbs.                Beef Sirloin, Cut into Strips

½ tbsp.             Salt and Pepper

1 C                   Flour

2 tbsp.             Oil

2 tbsp.             Butter

1                      Onion, Sliced

2 C                   Mushrooms, Sliced

2 C                   Beef Stock

½ C                  Sour Cream

12 oz.               Egg Noodles

2 tbsp.             Fresh Tarragon, Chopped

¼ tsp.               Nutmeg

 

Heat the oil in a large pot over medium heat. Season the meat with the salt and pepper and lightly coat in the flour. Brown the beef in the oil and remove from the pan.  Sauté the onions until soft and then remove.  Add the butter and sauté the mushrooms for 5 -7 minutes or until golden brown.  Place the beef and onions back to pan. 

Add the beef broth and bring to a simmer then add the pasta. When the pasta has cooked half way, add the sour cream and nutmeg then cook for five minutes over low heat, uncovered. Stir until thickened and season with fresh tarragon, salt and pepper.

 

 

 

Pork Loin with Figs and Apple Cider Sauce

 

2 lbs.    Pork Loin, sliced into ½ inch pieces.

Salt and Pepper

1 tbsp. Chinese 5 Spice Powder

1 tbsp. Oil

2 tbsp. Shallots, minced

5          Figs, Chopped

1 tbsp. Apple Cider Vinegar

1 C       Apple Cider

1 tsp.   Dijon Mustard

¼ C      Cream

 

Flatten the sliced pork with the palm of your hand and lightly season with salt, pepper and 5-spice powder. Heat a skillet over medium heat, add the oil, when it smokes place the pork in the pan. Cook the pork until lightly browned, turn and repeat. Remove the pork from the pan, add the shallots and figs and cook until shallots are soft. Add the vinegar to the pan and scrape up the bits from the bottom of the pan. Add the apple cider and reduce by ¾. Stir in the Dijon mustard and cream then add the pork and juices back to the pan. Simmer for 2-3 minutes until the sauce has thickened. Season with salt and pepper to taste and serve with steamed cous cous or quinoa.

 

 

 

Sweet Potato Hash

 

2 tbsp. Butter

½         Red Onion, diced

2          Celery Ribs, diced

1          carrots, diced

1          Bell Pepper, diced

1          Apple, Diced

2          Sweet Potatoes, diced

2 tbsp. Maple Syrup

Salt and Pepper

 

Place a large skillet over medium heat and add the butter to the pan. Add next 6 ingredients and sauté until soft and caramelized, about 30 minutes. Season with syrup, salt and pepper.
