Gingerbread Cookies

Not just for men! Make these fun cookies in any shape you wish. It's not as hard as you might think, and they are the perfect homemade gift.

Makes 12 cookies

Gingerbread Cookies
  • 3 cups all-purpose flour
  • 1/4 teaspoon sea salt
  • 3/4 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 cup granulated white sugar
  • 1 large egg
  • 2/3 cup unsulfured molasses
  • icing for decorating

In a large bowl, sift together flour, salt, baking soda, and spices. Set aside. Cream butter and sugar until light and fluffy. Add egg and molasses and beat until well combined. Gradually add flour mixture, beating until incorporated. Divide dough in half, wrap each half and refrigerate for at least two hours or overnight.

Place rack in center of oven and preheat to 350°F. Line 2 baking sheets with parchment paper. On a lightly floured surface, roll out dough to 1/8-inch–1/4-inch thick. Cut out shapes with cookie cutter. Place about 1-inch apart on baking sheet and bake 8–12 minutes, depending on the size of the cookies. They are done when they are firm and the edges are just beginning to brown. Remove from oven and cool on the baking sheet about 1 minute, then transfer to a wire rack to cool completely. Makes about a dozen gingerbread men, depending on size.
