In week three, Engine 2 “Cadets” will start choosing foods that contain healthy whole foods fats (avocado, nuts, seeds) in place of those that contain added oils. Eating the whole food (the olive, the almond, or the seed, for example) gives your body the phytonutrients, fiber, vitamins, minerals, and water that calorie-dense, nutrient-poor, processed oils lack. This week’s challenge is to read labels and leave on the shelf any foods that contain extracted and processed fats like olive oil, canola oil, coconut oil, vegetable oil, or any other oil at all. We’ll also learn new, and not too drastically different, ways of cooking without processed oil, and try some delicious dishes!
