Eggplant Parmesan is a classic dish that originates from southern Italy. Slices of eggplant are fried then layered in a pan with slices of fresh mozzarella, basil and parmesan cheese, then baked in a tomato sauce. Frittata di carcio is made by sautéing fresh artichokes then mixing them with beaten eggs and parmesan cheese to create a crustless pie cooked in a pan on top of the stove. Funghi ripieni are baked mushroom caps stuffed with cheese, sage and breadcrumbs. This amazing meal ends with a dessert of Cantaloupe marinated in honey and cognac.
