Proud to be distinguished from “the other white meat,” nowadays, pigs bred for maximum flavor are in high demand, at the same time “snout to tail” cooking is defining a generation of young chefs. We’ll show you the way around butts, bellies and trotters, but focus primarily on simple preparations of popular, familiar cuts.
