Creating the perfect Risotto is an art that takes care and patience. Francesca will teach you how to make a Milanese-style dish where the Arborio rice is sautéed with onions and wine, then simmered in a chicken broth with saffron. The saffron gives the rice a beautiful creamy yellow color and just a taste of smokiness. The Risotto is paired with another Milanese classic, Veal Shanks. These are braised in wine and vegetables, then topped with a fresh Gremolata. Enjoy these classic dishes with a side of sautéed Black Kale and a Parfait of strawberries and mascarpone cheese for dessert.
