This class will be taught by Chef Ani. Now that spring has sprung, fresh sweet peas are in the market just begging to be used, and oh, are we going to use them. Often relegated to a boring side dish, peas are actually an incredibly versatile food, from appetizer to dessert. We will use snow peas, English garden peas, split peas and a few unexpected versions to create a full menu of dishes perfect for Spring. Chef Ani will show you how to choose fresh peas, how to store them, how to prepare English and split peas for cooking, and how to pair them with other ingredients to bring out maximum pea flavor. You’ll also learn the chef’s secrets for stress-free stir-frying and how to build the perfect ice cream. Class has gluten-free options upon request, is vegetarian friendly and has hands on opportunities as desired. On the menu:

- Split Pea Soup with Orange and Tarragon
- Stir-fried Sesame Snap Peas
- Sugar Snap Pea Salad with Spring Radish and Manchego Cheese
- Fresh Pasta with Sweet Peas and Seasonal Mushrooms
- Sweet Pea Ice Cream
