Apple-Cranberry Muesli Crisp

Experiment with different varieties of apples and dried fruit to make this maple-sweetened treat, delicious for dessert or breakfast. Top servings with spoonfuls of yogurt or a drizzle of cream, if you like.
Ingredients
  • 10 apples, such as Fuji, Gala or Honeycrisp sliced
  • 1/2 cup dried cranberries or raisins
  • 2 cups Muesli cereal or rolled oats*
  • 2/3 cup whole wheat pastry flour or brown rice flour*
  • 1/2 cup walnuts chopped
  • 2 tablespoons flaxseed meal
  • 1 teaspoon ground cinnamon or more to taste up to 2 teaspoons
  • 6 tablespoons coconut oil
  • 4 tablespoons pure maple syrup

Method

Preheat oven to 375°F. Spread apples and cranberries or raisins in a lightly oiled 9x13-inch baking dish.

Combine remaining ingredients and press over apple mixture.

Cover tightly with a lightly oiled sheet of foil and bake until apples are just tender, about 45 minutes. Uncover and cook until golden brown, 20 to 30 minutes longer. Scoop into bowls and serve.

*For a wheat-free version, use 1 cup rolled oats in place of Muesli and use brown rice flour in place of whole wheat pastry flour.
