Apple Ginger Crisp

Use Granny Smith apples in this dish for sweet-tart results. Golden Delicious and Pink Lady apples are also perfect for making baked desserts like this one.

    Ingredients: 
    • Apple Filling
    • 6 green apples, sliced but not peeled
    • 1 tablespoon lemon juice
    • 2 tablespoons unbleached flour
    • 1 1-inch piece fresh, peeled ginger root, finely chopped
    • 2 teaspoons ground cinnamon
    • 1 teaspoon ground cardamom
    • 1/8 teaspoon salt
    • 1/3 cup frozen apple juice concentrate, thawed to liquid
    • Topping
    • 1 cup whole wheat pastry flour
    • 1/4 cup (1/2 stick) melted butter
    • 1/4 cup pure maple syrup
    • 1/4 teaspoon ground nutmeg
    • 1/4 cup slivered almonds

    Method: 

    Preheat oven to 350 degrees. For apple filling, toss apples with lemon juice. Stir in flour, ginger, cinnamon, cardamom, salt and apple juice concentrate. Spread in an oiled 9x13-inch baking dish. Set aside.

    For topping, stir together flour, butter, syrup, nutmeg and almonds. Crumble topping over apple mixture, pressing it down gently. Bake for 45 to 50 minutes or until apples are bubbling and tender.
