Cranberry-Ginger Crunch Grain Salad

This hearty salad of roasted cranberries, oats, coconut and pumpkin seeds is excellent served either warm or chilled. Be sure to use whole oat groats instead of steel-cut groats; cut groats yield a grain that’s too soft and porridge-like to mix well with the other ingredients.
Ingredients
  • 8 ounces (2 1/4 cups) whole cranberries (fresh or unsweetened frozen)
  • 1 ripe pear, cored and diced
  • 1 cup uncooked whole oat groats
  • 1/2 cup shredded unsweetened coconut (fresh, dried or thawed frozen)
  • 1/4 cup unsalted green pumpkin seeds (pepitas)
  • 2 tablespoons honey
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon ground allspice
  • 1 cup baby arugula

Method

Preheat the oven to 400°F. Line a baking sheet with parchment paper. 

Arrange cranberries on one side of the baking sheet and pear on the other side. 

Cook until berries are shriveled and lightly browned, and pear is soft and browned, about 20 minutes.

Meanwhile, bring 3 cups salted water to a boil. 

Add oat groats, lower heat and simmer, partially covered, stirring occasionally, until water is absorbed and groats are tender but still have a little bite, about 40 minutes. 

Add a tablespoon or 2 of water if it evaporates before groats are cooked.

Transfer cooked oat groats to a bowl and toss with coconut, pumpkin seeds, honey, ginger, cinnamon, nutmeg and allspice. 

Add cranberries and pear and toss again. 

Serve warm, room temperature or chilled, topped with arugula.
