Curried Potato Stew

Don’t let the simplicity of this dish fool you! This potato curry has layers of flavor from the mix of spices and vegetables. Serve this saucy stew with brown basmati rice and extra cilantro.

Ingredients
- 1 medium yellow or white onion, diced (about 1 3/4 cups)
- 2 tablespoons Indian-Style Spice Blend
- 3 Yukon Gold potatoes, diced (about 4 cups)
- 1 head cauliflower, cut into florets (about 8 cups)
- 3 cloves garlic, finely chopped
- 1 tablespoon grated fresh ginger (from a 2-inch piece of ginger)
- 1 (28-ounce) can no-salt-added diced tomatoes
- 1 (15-ounce) can no-salt-added garbanzo beans
- 1 cup frozen peas
- 1/4 chopped fresh cilantro
- Juice of 1 lime
Method
Heat a large pot over medium heat.
Add onion and Indian-Style Curry Blend to the pot.
Stir to coat onion in curry spices.
Cover and cook until onion softens, about 2 minutes.
If onion starts to burn, add a little bit of water.
Add potatoes and cauliflower; stir well to coat evenly in spices.
Once spices become aromatic, add garlic, ginger and 3/4 cup water.
Reduce heat to a gentle simmer.
Cover and cook until potatoes and cauliflower are tender, about 20 minutes.
Add tomatoes and garbanzo beans. Stir well to combine. Cook until stew is hot.
Turn off the heat, and toss in frozen peas, fresh cilantro and lime juice.
