Cashew Apricot Pilaf

Nutty whole grain KAMUT® khorasan wheat pairs deliciously with cashews and apricots in this flavorful pilaf. This whole grain retains its firm, chewy texture extremely well, making it a good make-ahead dish and an excellent choice for planned leftovers.

    Ingredients: 
    • 1 cup KAMUT® khorasan wheat, soaked 8 hours or overnight in cold water to cover
    • 2 cups low-sodium vegetable broth
    • 1 small red onion, diced
    • 1 bay leaf
    • 1/8 teaspoon fine sea salt
    • 1/2 cup raw cashews, toasted and chopped
    • 1/2 cup diced dried apricots

    Method: 

    Drain KAMUT® khorasan wheat and place in a medium saucepan with broth, onion, bay leaf and salt. Bring to a boil over high heat; stir well, cover, and lower heat until the mixture just simmers. Cook until grains are fairly tender, about 1 hour. Discard bay leaf and add cashews and apricots. Remove the pan from the heat and let sit, covered, for 5 minutes. Toss with a fork and serve hot or room temperature.
