Raw Oysters with Classic Mignonette Garnish

A mignonette is an easy-to-make condiment that typically employs vinegar and shallots. Make sure to shuck and prepare these oysters just before serving to keep them as fresh as possible. 

  • 1/2 cup red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons very finely chopped shallots
  • 2 teaspoons finely crushed white pepper
  • 1/8 teaspoon fine sea salt
  • 24 oysters, freshly shucked on the half shell

Whisk together vinegar, oil, shallots, white pepper and salt in a small bowl. Serve with oysters.
