Sea Bass Kabobs

This is a quick and easy way to prepare sea bass on the grill. This recipe also works well for parties. Serve with warm potato salad and slices of ripe summer tomatoes.
Ingredients: 
  • 2 pounds sea bass fillets
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, chopped
  • 1/2 cup dry white wine
  • 2 tablespoons chopped summer herbs (such as basil, chives, tarragon, and parsley)
  • 1/4 teaspoon ground black pepper
  • 1 cup cherry tomatoes
  • 3 small green, red or yellow bell peppers, cut into 1-inch pieces
  • 2 red onions, cut into wedges
  • 2 medium summer squash, cut into 1-inch pieces
  • Lime or lemon wedges (optional)

Method: 
Place sea bass in a large bowl and add oil, garlic, wine, herbs and pepper. Toss well. Cover and refrigerate for at least 30 minutes. Thread 1 piece sea bass, 1 tomato, 1 piece of pepper, 1 piece of onion, and 1 piece of squash onto a 10-inch skewer to form each kabob. (If using wooden skewers, soak in water for 30 minutes before assembling.)

Prepare a grill for medium-heat cooking. Place the prepared skewers on the grill and cook about 4 minutes. Gently turn and cook until the fish is cooked through and the vegetables are tender, 3 to 6 minutes. Transfer skewers to a platter and serve with lemon or lime wedges on the side, if you like.
