Sea Bass Kabobs

Serves 6 to 8

This is a quick and easy way to prepare sea bass on the grill. This recipe also works well for parties. Serve with warm potato salad and slices of ripe summer tomatoes.

  • 2 pounds sea bass fillets
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, chopped
  • 1/2 cup dry white wine
  • 2 tablespoons chopped summer herbs (such as basil, chives, tarragon, and parsley)
  • Pepper, to taste
  • 12 metal or bamboo skewers
  • 1 cup cherry tomatoes
  • 3 small green, red or yellow bell peppers, cored, seeded and cut into 1-inch pieces
  • 2 red onions, cut into wedges
  • 2 medium summer squash, cut into 1-inch pieces
  • Lime or lemon wedges (optional)

Place sea bass in a large bowl and add oil, garlic, wine, herbs and pepper. Toss well. Cover and refrigerate for at least 30 minutes. If using bamboo skewers, soak them in cold water for at least 30 minutes before using. Thread sea bass, tomatoes, peppers, onions, and squash onto skewers, alternating them as you go. Preheat grill. Place the prepared skewers on the grill and cook 4 minutes. Gently turn and cook another 3 to 6 minutes, or until fish is cooked through and vegetables are tender. Transfer skewers to a platter and serve with lemon or lime wedges on the side, if you like.
