Shrimp and Feta Pizzas

Serves 4

Replace shrimp with grilled chicken or prepared baked tofu.

Ingredients: 
  • 2 pita or other thick flat breads
  • 1 (15-ounce) can diced tomatoes, drained
  • 2 cloves garlic, finely chopped
  • 2 tablespoons chopped basil
  • 1 cup shredded mozzarella cheese
  • 1 (16-ounce) package frozen Key West pink shrimp, thawed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 cup crumbled feta cheese
  • Red pepper flakes (optional)

Method: 

Preheat oven to 400°F. Place pitas on a large baking sheet and set aside.

In a small bowl, combine tomatoes, garlic and basil. Divide mozzarella cheese and spread on each pita, leaving a 1-inch border around the edge. Divide tomato mixture and place on pizzas. Toss shrimp with oil and oregano and place on pizzas. Sprinkle feta cheese on top and bake 10 to 15 minutes, until pizza is crisp and shrimp are cooked through. Sprinkle with red pepper flakes, if desired. Slice and serve.
