Smoked Salmon Reuben Wraps

These wraps are a fun spin on the deli classic and make an easy lunch or handy tailgating treat. Add a big green salad for a complete meal.
Ingredients
- 4 large whole wheat tortillas, warmed until pliable
- 6 tablespoons prepared Thousand Island dressing
- 4 slices Swiss cheese, cut in half diagonally
- 1/2 pound sliced cold-smoked salmon
- 1/2 cup sauerkraut, well drained
Method
Lay tortillas on a work surface and spread each with 1 1/2 tablespoons dressing, leaving a 1/2-inch border around edges.
Layer each with 2 pieces cheese, one-fourth of the salmon and 2 tablespoons sauerkraut.
Roll up tightly and halve.
