Spinach and Watercress Salad with Honey-Almond Dressing

Watercress lends a subtle peppery flavor to this easy green salad that’s tossed with a unique dressing made from almond butter. Both the mixture of greens and the dressing can be prepared ahead of time, but wait to combine them until right before serving.
Ingredients: 
  • 1/4 cup creamy almond butter
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon warm water
  • 2 tablespoons minced shallots
  • 1/2 teaspoon coarse sea salt
  • 1/4 teaspoon ground black pepper
  • 3 cups packed baby spinach (about 3 ounces)
  • 1 bunch watercress, trimmed, leaves torn into bite-size pieces
  • 1/4 cup chopped fresh chives
  • 1 large cucumber

Method: 
In a small bowl, whisk together almond butter, lime juice, honey, warm water, shallot, salt and pepper until evenly blended.

In a large bowl, combine spinach, watercress and chives. Cut cucumber lengthwise in half, scoop out seeds and thinly slice. Add cucumber to bowl with greens and drizzle with honey-almond dressing. Gently toss until evenly coated.
