Ingredients: 
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 2 teaspoons white wine vinegar
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon coarse sea salt
  • Zest and juice of 1/2 lemon
  • 1 tablespoon tahini
  • 1 tablespoon honey
  • 1 teaspoon matcha powder
  • 2 green onions, thinly sliced

Method: 
In a small bowl, whisk together shallot, garlic, white wine vinegar, rice vinegar, salt and lemon zest and juice. Let sit for 5 minutes.

Whisk in tahini, honey, matcha powder and 3 to 4 tablespoons water until smooth, then whisk in green onions. Use immediately, or cover and refrigerate for up to 1 week.
