Vanilla Wafers with Sorbet and Raspberries

Start with a few crumbled all-natural vanilla wafers, then top with your choice of lemon or chocolate sorbets and a handful of fresh raspberries for the consummate summer treat.

  • 1 (8-ounce) box vanilla wafers
  • 2 pints lemon or chocolate sorbet
  • 2 cups fresh or frozen and thawed raspberries
  • Mint leaves

Crush vanilla wafers into crumbs in a food processor, then divide crumbs between 8 ice cream serving bowls or dishes. Scoop 1/2 cup of sorbet into each bowl, then top with raspberries and mint and serve immediately.
