
Dutch Oven Dinner
A hearty thank you to Donna for sharing this satisfying one-pot meal that's been a favorite in her family for three generations. She explains: "My Irish grandmother used to make this dish for my Hungarian grandfather and my father. When my father and Polish mother married, my mom tried to learn some of my father's favorite childhood recipes, and this was one she mastered. With lots of different textures and colors and flavors, but not too much seasoning, I think it's easy to see why this is sure to become a favorite for any family." We made it natural by using extra lean, all-natural ground beef, organic vegetables, whole wheat noodles and reduced fat cheddar cheese.
Serves 68
Brown ground beef in 5-quart Dutch oven or large skillet with a lid. Add green pepper, onion, mushrooms and corn. Season to taste with salt and pepper. Spread uncooked noodles evenly over top. Sprinkle cheese evenly over noodles. Pour the entire can of tomatoes over all. Simmer, tightly covered, for 1 hour, then let it stand 3-5 minutes before serving.
