Oven-Roasted Lamb Kebabs
Oven roasted for a succulent and tender bite, these delicious lamb and vegetable kebabs are easy to prepare and full of flavor. Serve with the tangy tzatziki sauce and a simple fresh cucumber, tomato and olive salad with feta cheese and warm pita bread for a traditional Greek delight.
Serves 6
- 6 bamboo skewers
- 1 cucumber, washed, peeled, cut in half lengthwise and seeded
- 1 garlic clove, finely minced
- 2 cups Greek yogurt
- 1/4 medium red onion, finely minced
- juice of half a lemon
- 1 pound boneless lamb chops, thick cut, cut into 1/2-inch cubes
- 1 red bell pepper, cut into 1/2-inch square pieces
- 1 yellow bell pepper, cut into 1/2-inch square pieces
- 1 red onion, cut into 1/2-inch slices
- 10 crimini mushrooms, thickly sliced
- sea salt, to taste
- ground pepper, to taste
- 1/3 cup olive oil
Soak the bamboo skewers in enough cold water to cover for at least 30 minutes.
To prepare the tzatziki sauce, combine the cucumber, garlic, yogurt, minced onion and lemon juice in a medium bowl. Place in the refrigerator to chill for approximately one hour.
Preheat the oven to 350°F.
Assemble kebabs by alternating each vegetable with a piece of lamb on the skewers. For example, pierce one slice of onion, then one cube of lamb, then one red pepper, then one cube of lamb, then one mushroom slice, then one cube of lamb, etc. Continue until all meat and vegetables are used.
Place all kebabs on a cookie sheet and season generously with salt and pepper, turning skewers around to season all sides. Drizzle with the olive oil, once again turning the skewers to evenly coat all of the meat and vegetables.
Place in oven for 12 minutes for medium rare or 15 minutes for medium to medium well. Serve with tzatziki sauce on the side.
Note: The kebabs may also be cooked on a grill at high heat, turning and browning all sides until cooked through.
