Mango and Orange Glazed Ham with Scallion-Cheddar Biscuits

Set out a platter of ham, a basket of warm biscuits and bowls of chutney, Dijon mustard and honey mustard for your guests to assemble their own biscuits. These are delightful at a brunch or with evening drinks.

Ingredients

Ham
1 (2-pound) fully cooked Black Forest ham
Zest and juice of 1 orange
1/4 cup brown sugar
1 small jar mango chutney
1 teaspoon freshly ground black pepper

Scallion and Cheddar Biscuits
4 cups all-purpose flour, more for rolling out the biscuits
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
3 scallions, white and light green parts, very thinly sliced
1 cup freshly grated extra sharp cheddar cheese
3 cups heavy cream

Method

Heat the oven to 350°F. Combine orange zest and juice, sugar, chutney and black pepper in a small mixing bowl. Stir well and set side. Rinse and pat dry ham. If there are strings, remove them. Place the ham on a baking sheet lined with parchment paper. Score ham in a diamond pattern using a paring knife. Use a pastry brush to brush chutney mixture over the ham. Place in the oven and bake for 30 minutes, until lightly browned and heated through. Slice ham and place on a platter.

For the biscuits, preheat the oven to 425°F. Adjust the oven rack to the upper third of your oven. Line a baking sheet with parchment paper.

In a large mixing bowl, whisk together flour, sugar, baking powder, salt, scallions and cheddar cheese. Add cream and stir with a wooden spoon until dough forms, about 30 seconds. Sprinkle flour over working surface. Dump mixture out onto floured space and knead lightly to make sure ingredients are well incorporated. Dust rolling pin with flour and roll dough into a rectangle 3/4-inch thick. Cut out rounds with a 2-1/2 inch round cutter and place on the baking sheet.

Bake until golden brown, 18 to 20 minutes, rotating baking sheet halfway through baking. Transfer biscuits to a cooling rack to cool for a few minutes. Split biscuits in half. Serve with mustard, chutney and ham.
