Golden Glazed Acorn Squash with Brown Sugar and Cinnamon

Serves 6

This autumn treat is a great side dish to serve with roasted pork chops or pork loin. Look for acorn squash that are firm and heavy for their size.

Ingredients

3 acorn squash
1/2 cup brown sugar
3 tablespoons butter, melted
1 tablespoon cinnamon
1/4 teaspoon nutmeg, to taste
1/4 teaspoon sea salt, to taste

Method

Split squash into halves and scoop out seeds and fibers. Steam in a pot with a tight-fitting lid until tender, 15 to 20 minutes. Preheat oven to 400° F. Place halves on a shallow baking dish. Mix sugar, spices, and salt, and sprinkle over squash halves. Drizzle with melted butter. Bake until squash is tender, approximately 15 to 20 minutes. (For a deeper glaze, broil for a minute or two).
