Turkey Gravy with Fresh Thyme

Serves 8 to 10

Keep this recipe by your side and the idea of making gravy won't ever strike fear in you again. Simply save the pan drippings from your roasted turkey to flavor this classic, thyme-infused gravy.

Ingredients

1/2 cup melted butter
1/2 cup flour
4 cups chicken or turkey stock
2 sprigs fresh thyme
Pan drippings from roast turkey
Sea salt, to taste
Ground pepper, to taste

Method

Make a roux by melting butter in a heavy-bottomed saucepan, stir in flour and cook, stir occasionally, for 4 to 5 minutes. Set aside.

In a saucepan bring stock, thyme sprigs and pan drippings to a boil. Reduce heat to a simmer. Whisk roux into simmering stock, being careful to stir out any lumps. Over low heat, cook gravy about 10 minutes until it has reached desired thickness. Season with sea salt and pepper to taste, strain and serve.
