Slow-Cooked Pulled Pork Sandwiches

Ingredients

1 yellow onion, thinly sliced*
1 1/2 pounds pork shoulder roast
1/2 cup water
1 (12-ounce) bottle tangy barbecue sauce*

Slaw
2 cups shredded cabbage
2 tablespoons minced yellow onion*
1/4 cup white vinegar
1 1/2 tablespoons mayonnaise*
2 teaspoons sugar*
Salt and pepper to taste
4 to 6 soft hamburger buns

Method

Place half the onion slices in bottom of slow cooker or crock pot; add pork, water, half the barbecue sauce and remaining onion slices. Cover and cook on medium 8 to 10 hours, stirring occasionally to break up the pork. Meanwhile, combine all slaw ingredients in a large bowl and refrigerate. Combine pork with remaining barbecue sauce and serve on warmed buns with coleslaw.
