Shrimp and Pineapple Kabobs

Serve these sweet and savory kabobs over steamed brown rice. Add a green salad with tomatoes and feta cheese for a perfect summer meal.

Ingredients

1 pound large shrimp, peeled and deveined with tails on
1 (15-ounce) can, drained (or 1 cup fresh) pineapple chunks
1 red bell pepper, cut into 1-inch squares
1 yellow or white onion, cut into 1-inch squares
4 to 6 (16-inch) bamboo skewers, soaked in water 1/2 hour
1/4 cup balsamic vinaigrette

Method

Oil grill and preheat to medium-high. Alternate shrimp and vegetables onto soaked skewers. Place skewers on hot grill and cook 3 to 5 minutes, turning once and basting often with vinaigrette.
