Day-Before Meatloaf

We've got a comfort-food classic you can whip up whenever you can find 10 minutes--first thing in the morning, last thing at night, after class, when the baby's napping...It'll keep in the fridge for up to two days, so you can choose when to bake it. Every ingredient in this meatloaf, except the ground beef, is available in our 365 Everyday Value brand.

Ingredients

2 pounds ground beef
3 slices smoked bacon, diced
1 cup frozen chopped spinach
3/4 cup breadcrumbs
3/4 cup beef or chicken broth
1/2 onion, chopped
1 large egg
2 tablespoons Worcestershire sauce
1 1/4 teaspoons salt
1/2 teaspoon freshly ground black pepper

Method

Combine all ingredients in a large bowl and mix well. Line a baking dish with foil. Gather the meat mixture into a ball, place it in the baking dish, and form into a smooth, even loaf about 12 inches long. Cover and refrigerate until ready to bake.

Heat oven to 400°F. Uncover meatloaf and bake until browned and cooked through, about 50 minutes.
