Tomato and Cheddar Soup
Tomato and Cheddar Soup
Serves 6
The fact that this nutritious homemade soup is garnished with crisp cheddar crackers will make kids love it even more.
Ingredients
1 tablespoon olive oil
1/3 cup finely chopped celery
1/2 cup finely chopped yellow onion
2 cloves garlic, chopped
1 (28-ounce) can diced tomatoes, with their liquid
2 cups chicken or vegetable broth
1/2 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon sugar
1 1/2 cups grated cheddar cheese
1/4 cup half-and-half or milk
1 tablespoon butter
Cheddar crackers for garnish
Method
Heat olive oil over medium heat in a medium pot. Add celery, onions and garlic and cook, stirring occasionally, for 3 to 4 minutes. Add tomatoes, broth, salt, pepper and sugar. Simmer for 8 to 10 minutes. Remove from heat and stir in cheese, half-and-half and butter. Ladle soup into bowls, top with cheddar crackers and serve.
