Pineapple Noodle Kugel

Serves 8

Pineapple puts a spin on traditional kugel in this cornflake-topped sweet dessert made with egg noodles. Scoop servings into bowls and serve warm, topped with whipped cream.

Ingredients

1/3 cup seedless raisins
6 eggs
1/4 cup honey
2 tablespoons granulated sugar
1 cup canned crushed pineapple, drained well
8 tablespoons (1 stick) butter, melted
1/4 teaspoon salt
1/4 teaspoon pepper
Nonstick cooking spray
8 ounces dried egg noodles, cooked according to package directions and drained
1 cup natural corn flakes, crushed
1 teaspoon ground cinnamon
1 tablespoon brown sugar

Method

Preheat oven to 325°F.

Soak raisins in hot water for 5 minutes and then drain. In a mixing bowl, combine eggs, honey, granulated sugar, pineapple, raisins, 4 tablespoons of the butter, salt and pepper; set aside. Spray the bottom of a 9- x 13-inch baking dish with canola oil or olive oil spray. Fill with cooked noodles, then pour egg mixture over the noodles. In a clean bowl, combine corn flakes, cinnamon, brown sugar and remaining 4 tablespoons butter. Sprinkle over noodles and bake, uncovered, for 45 minutes, or until a toothpick inserted in the center comes out clean.
